New booklets Financial support from CTA has enabled the production of four useful handbooks. Making safe food is an elementary guide to safe food handling and packaging for small-scale producers. Producers of food have to pay particular attention to hygiene and quality control through all stages of production, storage and distribution. This booklet consists of regulations relating to five aspects of food production which are interpreted by means of simple illustrations with simple captions covering the areas of: the building used to produce foods; the equipment used for processing; the personal hygiene of food handlers; the processing methods, packaging and labelling; and the storage and distribution of the processed food.
