El fruto del olivo (Olea europaea), y los productos derivados, representan una fuente valiosa de compuestos naturales con importante bioactividad. El presente Trabajo de Fin de Máster describe dos nuevos procedimientos, rápidos y precisos, para la extracción y el análisis de los compuestos bioactivos más importantes de la aceituna: oleuropeína y sus metabolitos, manitol, y los ácidos maslínico y oleanólico.
