Gula kelapa merupakan bahan pangan yang terbuat dari nira kelapa. Nira mudah mengalami kerusakan karena kontaminasi mikroba. Kerusakan nira dapat dicegah dengan penambahan campuran bubuk kapur dengan bubuk kulit buah manggis. Penelitian ini bertujuan untuk menentukan kombinasi antara persentase bubuk kulit buah manggis terhadap laru dengan jumlah pemberian laru dalam satu liter nira yang menghasilkan gula kelapa terbaik. Penelitian ini menggunakan metode eksperimental dengan Rancangan Acak Lengkap (RAL). Faktor yang dikaji meliputi persentase bubuk kulit buah manggis terhadap laru (M) (b/b) yaitu 2,5%; 5%; 7,5%; dan 10%; jumlah pemberian laru ke dalam nira kelapa (P) yaitu 1 g/liter (P1) dan 2 g/liter (P2).
