La expectativa de vida en los países latinoamericanos es de 74 años y Costa Rica supera este valor. El Banco Mundial reconoció que Costa Rica y Chile son los países con mayor esperanza de vida en el continente. Costa Rica tiene un promedio de 80 años y Chile de 79 (Organización Panamericana de la Salud, 2014). Esta nueva población se interesa más por la salud, la longevidad y el bienestar, tendencias que obligan a los productores de alimentos a buscar nuevas alternativas, para adicionar beneficios nutricionales a sus productos.
