In this work, we evaluated the genetic stabilization of artificialintra- (Saccharomyces cerevisiae) and interspecific (S. cerevisiae x Saccharomyceskudriavzevii) hybrids under wine fermentative conditions. Large-scale transitions in genome sizeandgenome reorganizationswere observedduring this process.
