It had been conducted a study on the making ethanol from nypa sap (Nypa frutican Wurmb) with fermentation process. This study aimed determine the amount of ethanol produced from nypa sap and to the amount of yeast that cauld produce the optimum ethanol. In this fermentation using yeast (Saccharomyces cerevisiae). To determine the amount of ethanol produced was carried out by weighing the gravity of ethanol destlilled using piknometer. The result of this study showed that ethanol could be produced from the nypa sap in the amount of 5 to 6% without significantly influence by the amoun of yeast used.
