Elsewhere ' we have brought together much of the available information on variations in the amount and distribution of the or-ganic material in enamel that occur in re-lation to tooth age and the initiation of caries. Our analyses of the published reports showed how substances not present in the organic structures of enamel at the time of tooth eruption could be present in the mature tooth and that enamel from old teeth contained more organic material than did that from newly erupted teeth (Table 1).
