Abstract: From dried peas can be extracted vegetal proteins with a relatively good digestibility, which contain all essential aminoacids. The extraction speed is considerable increasing if the process is made in an ultrasonic field. In this paper the influence of some parameters of the extraction process on the amount of extracted proteins was monitored. Many types of solvents were used and was determined the influence of temperature on the extraction process
