ABSTRACT Eggs were stored for three weeks in two different refrigerators with air movement rates of 9.5 and 5.9 meters per minute (m.p.m.). Half the cartons were closed and half were open. Egg weights, specific gravities, albumen heights, Haugh units, U.S.D.A. scores and pH were recorded. Egg quality loss was gradual and somewhat similar for both rates of air movement. Slightly more egg weight loss occurred at 9.5 m.p.m. of air movement than at 5.9 m.p.m., but the difference was not significant. Open cartons caused non-significant greater egg weight loss and quality decline when compared with closed cartons. All measurements indicated egg quality had been lost when the initial and final measurements were compared
