Section F Nutrition and pharmacy Preliminary Study on Nutritional Quality of Seeds of Five Buckwheat Species

Abstract: Determination of contents of protein, amino acid and rutin was carried out among seeds of five species of Fagopyrum Gaerth including Eesculentum, Etataricum, Ecymosum, Egracilipes and Europhyllum. Results show that, in terms of three quality characteristics, Ecymosum is superior to the other four species; Europhyllum has higher protein and amino acid contents than Egracilipes, Eesculentum and F.tataricum; While Egracilipes and Eesculentum have little difference, of which the contents of three characteristics are moderate; Etataricum has lower protein and amino acid contents compared with the other four species of Fagopyrum Gaerth, except for its higher rutin content
