Limited information is available about homopolysac-charide synthesis in the genus Lactobacillus. Using efficient screening techniques, extracellular glucosyl-transferase (GTF) enzyme activity, resulting in a-glucan synthesis from sucrose, was detected in various lactoba-cilli.
