Key words: buckwheat, chemical composition A comparative study of the leaf composition has been made in the four species of Fagopyrum viz. F. escutentum Moench, F. sagittalum Gilib., F tetsricum Gaertn. and F. kashmirianum Munshi. F. escutentum which possesses thicker and more succulent leaves has a higher content of total sugars and starch, besides a relatively lower phenolic content.
