Celiac disease (CD), also known as gluten-sensitive • enteropathy (GSE), is characterized by chronic inflammation and flattening (villous atrophy) of the intestinal mucosa, resulting in malabsorption syndrome. The etiology of GSE remains unknown, but gliadin, the alcohol soluble fraction of wheat gluten, is the antigenic agent.1 Patients with celiac disease may suffer from diarrhea, gastrointestinal problems, anemia, fatigue, psychiatric problems, other diverse side effects, or they may be asymptomatic. All GSE patients have an increased risk of lymphoma.2 A gluten-free diet may control GSE and associated risks.
