This study had the aims of comparing and contrasting 3 methods of measuring the antioxidant capacity of mango seed kernels and quantifying the antioxidant activity. From the results obtained, it was determined that the antioxidant activity is quite high compared with many fruits. The activity of the kernel extract is some 10 times that of the mango pulp. This suggests therefore that instead of just disposing of the kernels as waste from mango processing operations, it may be possible to extract useful antioxidant materials for human food use. Some case is needed to confirm that no cyanogenic contaminants are co-extracted. If shown to be safe, such extracted materials would appear to offer a valuable by-product.
